棉花蛋糕的詳細做法!像棉花一樣柔軟 !
這次做了棉花蛋糕。。。
口感名副其實的像棉花一樣柔軟。。。
材料:
60 克 牛油
80 克 低粉
1 個全蛋 (B 型)
5 個蛋黃 (B 型)
80 毫升鮮奶
1 茶匙 檸檬汁
5 個蛋白 (B 型)
95 克 糖
Ingredients:
60 g butter
80 g superfine flour
1 whole egg (B size)
5 egg yolks (B size)
80 ml fresh milk
1 teaspoon lemon juice
5 egg white (B size)
95 g sugar.
棉花蛋糕的做法。。。。
Step for making cotton cake …………
1) 牛油隔水溶化, 篩入粉拌均。
Double boil butter until dissolve.
Sift in flour and mix well.
2) 加入一個全蛋拌均,然後逐一加入蛋黃攪拌均。
Add in 1 whole egg and mix well.
Then add in 5 egg yolks one at a time and mix well.
3) 加入鮮奶和檸檬汁拌均。
Add in fresh milk and lemon juice.
4) 蛋白加糖打至濕性發泡。
Whisk egg white and sugar until soft peaks formation.
5) 把1/3 的蛋白糊加入蛋黃糊里拌均,再把蛋白糊加入蛋黃糊里攪拌均勻。
Mix well …. 1/3 egg white mixture in egg yolk batter.
Then, gently mix well the remaining of the two batters.
6) 倒入搽油鋪上烘培紙的模里,以150度C 水浴法烘1個小時。
Pour into a greased and lined mould,
steam bake at 150 degree C for 1 hour,
7) 取出蛋糕待5分鐘後,才脫模待冷。
Remove the cake from oven and let it stand for 5 minutes.
Then take out from mould and leave to cool.
